Discover the Delight of Yangben Curry: A Traditional Limbu Dish

Introduction

Yangben Curry is a cherished delicacy originating from the Limbu culture, found in the eastern region of Nepal, known as Limbuwan. This unique dish has transcended borders and is now enjoyed by Limbu communities worldwide, including India, Thailand, Hong Kong, the UK, the USA, Japan, Australia, and many more. Yangben Curry features a special type of fungus called "Yangben," combined with pork meat, blood, and a medley of Himalayan herbs and spices. This flavorful curry cannot be made with Yangben alone; it requires a combination of essential ingredients to achieve its distinctive taste.

Essential Ingredients

- Yangben: 45 grams

- Pork (large and small intestine): 250 grams

- Pork liver/heart/blood: 250 grams

- Tomatoes: 2 large

- Ginger/Garlic paste: 2 tablespoons

- Green chilies: 3

- Onion: 1 large

- Timur powder: 1 teaspoon

Preparation Guide

1. Prepare the Yangben:

   - Soak the Yangben in warm water for 30 minutes.

   - Drain the water and mix the Yangben with blood.

2. Prepare the Pork:

   - Cut the pork meat, liver, heart, and large and small intestines into small pieces.

3. Cook the Curry:

   - Heat oil in a Karai (wok or deep frying pan).

   - Add julienned onions to the Karai and sauté until they become soft and light brown.

   - Add the pieces of pork and cook until almost done.

   - Add the soaked Yangben to the Karai, mix well, and cook for an additional 8 to 10 minutes.

4. Serve:

   - Yangben Curry is now ready to be served.

   - Top the curry with chopped green chilies, onions, and coriander leaves.

   - Serve with traditional Limbu beverages like Tongba or Rakshi and plain rice for a complete meal.
